Its that time of year again, for ice cream and all sorts of chilly desserts. Here's a little something even the kiddies enjoy making and can't wait to eat.
Mint Chocolate Chip Ice Cream
Makes 6 quarts
Ingredients:
4 cups milk
3 ¾ cups sugar
1 ¼ tsp. salt
4 cups half & half
2 tsp. vanilla extract
9 cups whipping cream
3 cups grated semisweet chocolate or chocolate chips
¾ tsp. peppermint extract
Directions:
Scald milk until bubbles form around the edge of sauce pan.
Remove from heat.
Add sugar and salt, stir until dissolved.
Stir in half & half, vanilla, peppermint and whipping cream.
Refrigerate 30 minutes.
*follow directions for using ice cream maker. When ice cream is finished, remove paddle and stir in chocolate. To set hardened ice cream, place in freezer for a couple of hours. If soft serve is your thing, dig in!
